Rice Pattiri
Ingredients:
Rice flour- 1 cup
Water-1 cup
Oil-2 tsp
Salt to taste
Method:
- Boil water with salt and oil.
- When it starts bubbling furiously ,switch of the fire,add the rice flour and stir it well with a spoon.
- Close the vessel with a lid and leave for 5 mins.
- Mix well and divide them into portions.
- Oil your palm and rolling pin & roll them on a piece of clingfilm
- Cook them on medium heat on a tawa or a flat bottomed non-stick pan.
- Try not to over cook them (too many brown spots) so that it doesn't feel dry when you eat them.

Vegitable Puffs
Ingredients
- Puff Pastry Sheet - 1Pk( It has 2 sheets)
- Onion - 1 large chopped fine
- Beans - 1/4cup
- Peas - 1/4cup(boiled)
- Carrot - 1 (grated/chopped)
- Beetroot - 1 (grated)
- Ginger - 1/2 tsp(grated)
- GreenChillies - 3(finely chopped)
- Paneer - 10-15 cubes
- Redchilli Powder - 1 tsp
- Coriander Powder - 1/2 tsp
- Garammasla Powder - 1/4 tsp
- Cumin Powder - 1 tsp
- Olive Oil - 2 Tbsp
Method :
1) Heat oil in a kadai add grated ginger, finely chopped green chillies, turmeric and onion fry till the onions turn golden brown
2) Soak the fried paneer in hot water for about 1/2hr and scrumble and keep it aside 3) Add the vegetables in the following order beans, peas, carrot and beetroot and saute for sometime.
4) Add coriander powder, garam masala, red chilli powder and salt. Then add the scrambled paneer and saute for 3 minuts
5) Cover and reduce the heat and allow it to cook.
6) Thaw the pastry sheets and unfold . If necessary roll pin over the pastry sheets to make them even.
7) Cut the pastry sheets into square pieces and place the filling in the middle and cover the end with the other end . Press the ends tightly in order to seal them. You can use water to seal .
8) Preheat the oven at 350°F and place the puffs in baking tray and bake them for about 30 minutes or till the crust turns golden brown in color. Serve hot.
Prawn Biriyani
PRAWNS BIRIYANI
- Prawns -1/2kg
- Basmati Rice -1kg(5cups)
- Greenchilli -5 to 7 numbers
- Ginger Garlic Past -11/2 tablespoon
- Oninon(Big ) -4
- Tomato(medium) -3
- Coriander leaves -a small bunch
- Curd -4 tablespoon
- Chilli Powder -4 tablespoon
- Turmeric Powder -1/2 tablespoon
- Coriander Powder -2 tablespoon
- Garam Masala -2tablespoon
- Biriyani Masala -1tablespoon
- Salt -needed
- Refined Oil -3 tablespoon
- ghee -2tablespoon
- Cashunuts -25gm
- Raisins -25gm
- Lime juice -2tablespoon
- Elachi -3
- Patta -2medium size
- Grambu -3
- basen leaves -2big
Preparation
First wash and soak the rice for 15 to 20mints and drain it.
Wash and clean the prawns then marinate the prawns with 2 tablespoon red chilli powder,1/4 turmeric powder,1 tablespoon coriander powder,1/2tablespoon ginger garlic paste,1tablespoon lime juice and salt keep it there for half an hour.
After that boil 3tablespoon oil and fry the prawns.take the prawns out and saute the 3onions,then add greenchillies,1 tablespoon ginger garlic paste,3tomatoes and saute well like paste after that add the powders rest chilli powder,turmeric powder,coriander powder,garam masala11/2 tablespoon,biriyani masala and salt.last add the curd and prawns mix it well.
heat a big pan with ghee,fry the cashenuts,raisins,and the 1/2 of the onion,keep it aside.In the same ghee saute elachi,grambu,patta,bay leaves and the onion and fry the rice for 5mints.same time boil 10 cups water(double the rice).poure the boiled water into the frying rice.Add lemon juice and salt,cover the lid and cook until the water dries.
After that mix the rice ,prawns masala and fried cashew,raisins and onions.
