KAPPA MEEN PUZHUKU

Ingredients
Tapioca/Kappa                              - 1kg
Indian mackerel/Sardines               - 500gm
Turmeric powder                          -1/2 teaspoon
Chilly powder                                - 1/2 teaspoon
Greenchilly                                     - 2
Coconut                                         - 1b
Garlic                                             - 4
Onion                                             - 1/2 size
Jeerakam                                        - 1/2teaspoon
Salt                                                 - to taste

Method:
  • clean and cut the tapioca,and cooked  with salt and turmeric in a preasure cook for 2 whistles
  • clean the fish,add water,turmeric and salt and bring the whole thing for 1 minute boil.
  • grind coconut,jeerakam,greenchilly, onion,garlic without adding water
  • clean the fish by removing the bones
  • mix the whole thing togther and add salt.

Nirapara Pepper chicken



Ingredients:
  • Chicken                                                         -1 kg
  • Ginger                                                           -1'inch piece
  • Garlic                                                            -4nos
  • Green chilly                                                    -2nos
  • Crushed pepper                                              -2Tsp
  • Nirapara Pepper Chicken Masala                      -4Tsp
  • Curry Leaves                                                  -One handful  
  • Onion                                                             -2nos
  • Coriander leaves                                             -1small bunch
  • Salt
  • Oil
Method:

       cook the chickenin a little water with salt and 21/2teaspoons of Nirapara Chicken Masala.In a pan,toss some sliced onion,chopped ginger,sliced green chilly and curry leaves in a little oil till brown. Add the cooked chicken and one teaspoon of Nirapara chicken masala and cook till thick. Garnish with crushed pepper and coriander leaves.

Prawns Grilling



Ingredients

  • Prawns                                           -250gm
  • Red chilly powder                           -1tbsp
  • Turmeric powder                            -1/2tsp
  • Green Capsicum                             -1/2 cut dice
  • Big Onion                                       -1/2 cut dice
  • Ginger Garlic paste                         -1tbsp
  • Garam masala                                 -1/2tsp
  • Lemon juice                                    -1tbsp
  • Pepper powder                               -1/2tsp
  • Salt
  • Oil to spray

Method:

    wash and clean the prawns.marinate prawns with the above ingredients .also marinate the diced capsicum and onion.keep the prawns in fridge for at least 2 hours (if you keep overnight it will taste better).Preheat the oven to 280 f .Take the baking sheet and arrange the prawns in skewers along with capsicum and onion.spray cooking oil.keep the prawns into oven for 15mints.flip the prawns in between..then broil the prawns 5mints to get the crispy prawns. serve as appetizer or side dish




                                                                                     

Beef Ularthiyatu







For marinating beef

Beef                                                                           - 1/2kg
Onions                                                                     - 1, medium sliced length wise
Red Chili powder                                                - 3 tsp (i used kashmiri chili powder) 
Coriander powder                                              - 3tsp
Turmeric powder                                               - 1/2 tsp 
Perumjeerakam                                                   -1tsp
Ginger                                                                      - 1tsp  finely chopped 
Coconut oil                                                            -2tbsp
Salt                                                                            -to taste

For frying/tempering:
Big Onions                                                              -3medium size (sliced length wise)
Coconut slivers/Thenga kothu                     - 1/2 cup 
Grennchillly                                                          -4nos
Ginger                                                                      -1"inch piece finally chopped
Garlic                                                                        -4nos finally chopped
Chili flakes                                                             -2tsp
Coriander powder                                               -3 tsp
Pepper powder                                                     -1tsp
Garam masala powder                                       -1tsp
Curry leaves                                                           -2springs

Method:
  • Marinate the beef with above  ingredients and keep aside for at least  half and hour to 1hour.
  • after that cook the beef in cooker with 2 to 3 whistles.
  • Once the beef is cooked and if you have water left in the cooker, cook till the water is evaporated almost completely.
  • In another pan, heat oil,  saute the onions in it till golden brown in colour
  • after that add green chili,ginger and garlic.
  • then add chilli flakes ,coriander powder,pepper powder .
  • Add the cooked beef into it and fry it till you get a nice dark brown colour for the meat.
  • at last add the curry leaves and sprinkle the garam masala and saute for 2mints
  • Serve hot with rice, chapathi , appam or bread!
